The Best Chocolate Cake

INGREDIENTS:

  • 2 eggs separated
  • 1 1/2 c sugar separated into 1c & 1/2c
  • 1 3/4 c cake flour
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup vegetable oil (virgin coconut oil)
  • 1c buttermilk (1 tbsp bottled lemon juice + 1c whole milk)
  • 1/2 cup cocoa powder (Ghirardelli)
  • 1 tbsp shortening

The Best Chocolate Cake

DIRECTIONS:

  1. Mix in a bowl or stand mixer: 1c sugar, 1 3/4c cake flour, 1/2c cocoa powder, 3/4 tsp baking soda, 3/4 tsp salt
  2. Beat in a separate bowl: 2 egg whites until stiff peaks form and then SLOWLY add in 1/2c sugar and beat until more stiff and glossy
  3. Mix into the dry ingredients in step 1: 1/2c vegetable oil, 1 tbsp shortening, beat for 1 minute. Add and beat for 1 minute 1/2c buttermilk. Add and beat for 1 minute 2nd 1/2c buttermilk + 2 yolks

DIRECTIONS CONT.:

  1. Fold: Egg whites into batter (use as little stirring/folding as possible)
  2. OPTIONAL: add fruit dredged in flour, or a tsp or more of flavored extract
  3. Grease and flour 2, 8in. round pans, cupcake pans, or loaf pans and pour batter evenly into them
  4. Bake @325 for about 30 minutes or until a toothpick comes out clean. Cool completely and ice, frost or serve as is. Remember to adjust time for different shaped pans.
