Emily Post Cookbook, New England Fish Hash Recipe

The Recipe - Lizzie is off to Martha’s Vineyard for summer vacation and we decided to do three New England seafood-themed recipes while she’s away.

TIME: 25 minutes

SERVES: 4

Ingredients

  • 1 cup cooked flaked fish
  • 1 cup finely chopped cold boiled potatoes
  • 1 small onion, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, beaten
  • 1 tbs. chopped parsley
  • 2 tbs. salt pork or bacon fat

Directions

Mix ingredients in the order given [except the pork fat].

Have a skillet ready, heated, with 2 tbs. salt pork or bacon fat. Spread the mixture evenly and let brown without stirring. Fold over as for corned beef hash and serve on hot platter. Garnish with parsley.
